CARROT CAKE RECIPE

Like i said in the opening post of this blog, i will be posting recipes of some simple-to-do cakes.
The recipes will be such that you won't require special ingredients to make them neither will you have to stress yourself out when making them.

Carrot cake is one of such cakes that are very easy to make.
I had an urgent order for cake yesterday from a regular client who lives in Karimo, Abuja. I made this carrot cake for her and it was delivered this afternoon. I asked her if she liked it about an hour after delivering the cake to her and she said YES! Its very nice.

So, here goes the recipe for my carrot cake:

INGREDIENTS
4 cups  flour, sifted
2 cups granulated white sugar
2 cups vegetable oil
5 large eggs
1/2 tbs salt
1 tbs Cinnamon spice
1/2 tbs baking soda
1/2 tbs baking powder
1 tbs vanilla flavour
3 cups finely grated carrot
1 cup crushed pineapple





PROCEDURE

1)  Set your oven to 180 degrees centigrade.
2)  Sift all the dry ingredients together.
3)  Pour the sugar and oil into a mixing bowl and beat for 1min.
4)  Add the eggs one at a time and beat briefly till the eggs have creamed with the oil and sugar mixture.
5)  Divide the flour and pineapple into 3 parts and add a part each of pineapple and flour into the egg        mixture,beat till the flour and pineapple are incorporated.
6)  Add the second part of flour and pineapple and cream. Add the remaining part of flour and pineapple and cream further more.
7)  Add the vanilla and cream for 1 minute.
8)  With your spatula or spoon, fold in the carrot thoroughly.
9)  Pour batter into well creamed or oiled baking pan. Smooth top with your spatular.
10)Bake in a hot oven at 180 degrees centigrade for 50 to 60 minutes.
You will know the cake is getting cooked when you start perceiving the aroma.
To know if the cake is cooked, insert a knife or cocktail stick into the middle of the cake. If the knife or cocktail stick comes out clean, then the cake is cooked.  Bring out from the oven and allow to cool.
Carrot cake is normally frosted with cream cheese frosting. This particular one i baked yesterday wasn't frosted because my client wanted an unfrosted cake to be snacked on (the sliced carrot cake in the pic below is a little extra i made for myself).

This cake can be eaten with chilled soft drink or taken as breakfast with a cup of tea.
